Southern Style Cole Slaw
One medium onion, quartered and thinly sliced
4 cups thinly sliced green cabbage
4 cups thinly sliced red cabbage
5 carrots, coarsely shredded
7 Tablespoons white wine vinegar
3 Tablespoons olive oil
5 Tablespoons light mayonnaise
2 Tablespoons caraway seed
1 Tablespoon celery seed
1 Tablespoon mustard seed
1 teaspoon kosher salt
½ teaspoon black pepper
Toss onions, green and red cabbage, and carrots in large bowl.
In a small bowl, mix vinegar, olive oil, and mayonnaise together.
Heat a skillet to medium; add caraway seed, mustard seed and celery seed. Stir and heat until seeds are slight tan and have a roasted smell.
Add roasted seeds to vinegar, olive oil, and mayonnaise mix.
Mix dressing into cabbage mix.
Adjust with salt and pepper.
